About 10 years ago, Jay Kennedy my dad, Dave Gapinski and their other friend Shannon Rettke built their first smoker together. Unfortunately, that one didn’t last very long. You could say, it went up in smoke. They learned a lot through their journey of building not only one, but two smokers since then. Both were a success. The second smoker they built now has found it’s home at a childhood friend of Jay’s who owns a resort in Canada. The idea stemmed from their passion for deer hunting and processing. It grew amongst friends and families in which they gather once a year to process hundreds of pounds of venison. They participated in “Pork in the Park” in Hackensack as, “Three Fat Guys and A Smoker” in which they took first place for pulled pork and people’s choice for their ribs. They have done other events along the way as well. Back when they built their first smoker together they dreamed of opening some sort of meat processing or meat smoking market, potentially as their retirement together. When Jay passed, the community felt it. Family and friends gathered to remember what joy and community he brought to us all. When my dad heard of Von Hanson’s selling their small corporate store in town, he decided to pursue the dream that him and his best friend had planned so long to do together. Jay will always be remembered and through this he is honored. We are proud to be a locally owned market and hope to positively impact our community.
