Hatch Burrito Co.
Chris and Zoe here, owners of the Hatch Burrito Co. food truck. Chris is a Colorado native, growing up in Golden, Colorado. Zoe grew up in Rochester, Minnesota and met Chris while living in Denver, Colorado for ten years. We moved to Walker, Minnesota in 2021, after spending the summer of 2020 in the area with Zoe’s family. We fell in love with this area and decided to leave the hustle and bustle of the city and now call Walker our home.
After spending a couple of years here, we were only really missing one thing, which is a lot of the flavors we were accustomed to when we lived in the Southwest. We had been talking about opening a restaurant for years, and then we came up with the idea of starting a mobile food unit. We pride ourselves on using the freshest ingredients, and authentic recipes to create a vibrant menu full of flavor, with a variety of spice. Our menu is based around the Hatch Chile, which is out of Hatch, New Mexico, but is omnipresent in the Denver area, where you can find chile roasters on every street corner in late summer and early fall, when they are harvested. Coloradoans put green chili on EVERYTHING, which is a hearty soup or sauce made with Hatch Chiles, pork, and a blend of seasonings. As Chris says, it offers some spice, but is more about the flavor, just like our food truck!
We are so excited to join the Chamber of Commerce, as serving our community quality food has been our number one priority. We love to share our favorite recipes with our new neighbors and friends. We feel that we are adding some exciting variety to the local dining options, and are really looking forward to next summer, when locals and visitors alike can grab a quick bite of filling, fresh food as they go about their north woods adventures.
